Black Bean Salad with Corn, Avocado & Lime Vinaigrette
Fresh Coconut Juice with Chia Seeds

INGREDIENTS
UTENSILS
Measuring cup and spoon, glass or cup, knife, pitcher, ice cube tray and coconut shredder.
INSTRUCTIONS
1.
Get a clean, empty ice cube tray with a lid.
2.
Divide the finely chopped coconut flesh equally between 6 moulds (around two teaspoon each mould). Add coconut juice into each mould until the coconut flesh is covered and the moulds are 75% full. Cover it with the lid.
3.
Place the ice cube tray in the freezer and allow the mixture to completely freeze over.
4.
Add 2 tablespoons of chia seed to the remaining coconut juice, mix and let it soak for 20-30 mins. Set aside.
5.
Remove the tray of ice cubes from the freezer.
6.
Get two glass and place three ice cubes of the frozen coconut juice and flesh into each glass.
7.
Add the soaked chia seed mixture to each glass.
8.
Serve and enjoy!
