Black Bean Salad with Corn, Avocado & Lime Vinaigrette
Pan-fried Lotus Root Tofu Patties

Grater, Strainer, Mixing Bowl, Measuring cups, Measuring spoons, Non-stick frying pan
Soak the dried Shitake mushrooms in hot water for 1 hour or until softened. Chopped them into fine pieces.
Place the tofu inside a bowl and microwave for 2 minutes. Place the tofu on a strainer to drain off the water.
Grate the lotus root in a bowl.
Add all the ingredients (except the olive oil) and mix well into a paste.
Heat the olive oil in a frying pan, use two tablespoons to form individual patties that are about 5 to 6 cm in diameter and place them on a plate. Pan-fry them in the hot oil until both sides are golden.
Plate the cooked patties and serve.
