Black Bean Salad with Corn, Avocado & Lime Vinaigrette
Peanut and Black Sesame Pudding

4.7 grams of fibre per serving
Food processor, Measuring cups, Measuring spoons, Saucepan
Dry roast the rolled oats in pan until light brown. Blend into powder.
Dry roast peanuts and black sesame seeds. Grind them up to a fine consistency.
Boil 3 cups of water in a saucepan. Add the peanut and sesame paste and stir until slightly thickened.
Add blended oats slowly. Keep stirring until well mixed.
Add the coconut milk, vanilla extract and liquid stevia.
Dissolve the arrowroot powder in 3 tablespoons of water and add it to the pot.
Stir the mixture for 1 to 2 minutes until thickened.
To serve, pour into dessert bowls while still warm.
